Scalloped Potatoes and Ham

6 cups raw potatoes cut into cubes
1 med. onion minced
2 tsp salt
1/2 lb. cooked ham, cubed
4 TBSP butter
4 TBSP flour
2 cups milk
1 1/2 cups cheddar cheese

Layer potatoes,onion,1 tsp salt and ham into a slow cooker.
melt butter in a saucepan. Stir in flour and 1 tsp salt. Cook until bubbly. gradually add milk. Cook until smooth and thickened. Add cheese and stir until melted. Pour over potatoe-ham mixture, stirring lightly.
Cover. Cook on low 6-7 hours, high 3-4 hours.

    Let me know if you liked it! I had an extra crock pot and now my mom is interested in that "crock pot craze". I wrapped it up for her and she was thrilled. I am going to make her a recipe booklet with some things for her to try. She is in her late 60's......she has never once used a crock pot! Amazing! Everythng "old" has become "new". I guess being thrifty, practical and using time wisely is stylish......

    I made this tonight and it was very very good! It is so cold and so snowy here it was the perfect winter comforting dinner. I served it with green peas....which were a nice compliment and I toasted some wheat bread. Simple but sooo good!!
